Channels include API-connected ones like Shopify stores and Manual Sales Channels. Draft and Live versions of the same channel-specific product are never counted separately.

No. Your Master catalog lives in Toriut and is fully independent of any storefront. You can build and manage product data with sample data or a CSV import, then push it out through API-connected channels like Shopify, or through Manual Sales Channels for destinations you manage via export. Shopify is optional, not required.
